Crispy Crumbed Cassava Balls

These crunchy cassava balls are to die for! If you can get your hands on some cassava root, I 100% recommend you trying these out. With the Crunch on the outside meeting the soft cloudy middle, you’ll never make anything else with cassava.

Crispy Crumbed Cassava Balls

Ingredients:

3 large cassava roots peeled, boiled and mashed

2 large cloves of garlic crushed

1 cup Gluten Free bread crumbs

1/2 tsp salt

1/4 tsp pepper

2 eggs whisked

1/2 cup olive oil or avocado oil

nutritional yeast, lemon & coriander to garnish

Method:

Place cooked & mashed cassava root in a large bowl with garlic, salt & pepper and mix until combined. Roll into balls (can be whatever size you like). Coat in egg wash then cover in bread crumbs until completely coated. Heat olive oil in a large pan until hot then place cassava balls into hot oil. Turn over cassava balls until completely browned and crispy on the outside.

Take out and place on paper towel to soak up excess oil then garnish with nutritional yeast, coriander, lemon & salt and pepper.
